Delicious summer salad recipe

We love this summery salad, make up for packed lunches or serve with baked chicken as a delicious dinner!

Serves: 2 people

Ingredients

7 baby plum tomatoes

1 tbsp extra virgin olive oil

Small sprig of thyme or rosemary or oregano

Pinch Maldon salt flakes

¼ courgette, core removed and chopped into chunks

40g feta, chopped into small chunks

½ tbsp basil leaves roughly chopped

½ tbsp extra virgin olive oil

Pinch Maldon salt flakes

Freshly ground black pepper

140g cooked orzo

Method

1.Preheat the oven to 160C/ fan 140C.

2.Wash the tomatoes and chop in half. Drizzle with the oil and place herbs on top along with salt flakes. Roast for 45 minutes on middle shelf.

3.Cook the orzo to the packet instructions then rinse under cold water.

4.Remove the core from the courgette (if needed) and chop into small chunks.

5.Combine all the remaining ingredients in a bowl, mix and serve.
